Ham & Oinks

 Grammy got Minnie this adorable kids cookbook for Christmas.  We finally sat down and picked out a few items she wanted to make, and bought the ingredients at the store. She pretty much made this all her self, I just had to help with the eggs, and the baking of her tortilla.
 She is using the ham to make the pig ears and face.
 We used pepperoni for the nose, and mustard for the eyes and mouth. The mustard came out quickly so her piggy has a big smile. She ate the whole thing, and we had a fun time making it together. =)

Egg Caserole

On Sunday Morning last week, Minnie and I made Grammy's Famous Egg Casserole. We used Gluten Free Flour, instead of regular, and we couldn't taste a difference. Minnie did most of the prep herself. She loves to help me cook in the kitchen. =)
She cut up the mushrooms very carefully. =)


Oh boy this is heavy mom.
Now to cook it. =)

Saint Patty Cupcakes

On the Holidays we like to make cookies or cupcakes, something to go with the holiday. Here is Minnie and I making some Gluten Free cupcakes for Saint Patty Day. We put Green icing on them, but my battery died before I was able to get pics of the finished project, and of course now they are all gone. =)
Betty Crocker makes a great Gluten Free yellow cake mix.

I taught her to crack eggs, and she did very well, no shell in the batter.

Rice Krispies

Minnie's favorite desert since Celiac is Rice Krispy treats. We try to make them as often as we can, and use all the fun new Marshmallows that come out. This time we used the Valentine ones.

New Journey

Minnie and I have decided to document our Gluten Free Journey on here. We have tried some great new recipes, and are having fun cooking together. As many of you know Minnie was diagnosed with Celiac Disease a few years ago. Some of you may be thinking what is that? Well to sum it up, it means she can not eat anything with Wheat, Rye, Barley, or Oats. You would be amazed how many things have these ingredients in them. Our local grocery store does carry a lot of Gluten free items, but we still have to make a lot ourselves. =)
